Aunt Daudies' Fruit Cake

Ingredients

  • 1 c. orange juice
  • 4 eggs
  • 2 c. sugar
  • 2 sticks margarine
  • 4 tsp. baking powder
  • 1 lb. red candied cherries
  • 1 lb. green candied cherries
  • 1 lb. candied pineapple
  • 1 small box dates, chopped
  • 1 can coconut
  • 1 qt. chopped pecans
  • 4 c. flour (plain)
  • 1 tsp. vanilla
  • 1/4 tsp. salt

    Soften margarine.

    In very large bowl, mix by hand the margarine, sugar and eggs.

    Add dry ingredients and orange juice. Add candied fruit, nuts, dates and coconut.

    Mixture will be stiff.

    Place in greased pans.

    Will make several small cakes. Fill pans to about 2/3 full.

    Bake in 225° oven (no higher) 3 hours or until light brown.

    Will store well for 2 to 3 months. Store, tightly covered.
