Ingredients

  • 8 to 10 red potatoes (skin intact)
  • 4 red onions, peeled (root intact) and cut into sixths
  • 8 to 10 plum tomatoes, halved lengthwise
  • 4 red peppers, cored, seeded and cut into 2-inch strips
  • 6 cloves garlic, halved
  • olive oil
  • salt and pepper

Directions

    Microwave pierced potatoes 15 minutes on High.

    Halve potatoes and place in broiling pan.

    Add onions and tomatoes, cut-side up. Set in peppers, skin-side up.

    Add garlic.

    Sprinkle with olive oil, salt and pepper.

    Broil close to element until potatoes are browned and peppers are blistered, turning all vegetables often. Cook about 15 minutes.

    If onions and garlic aren't soft and gold, cook 10 to 15 minutes more at 450°.
