- 6 potatoes, peeled and cubed
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1/2 cup black olives
- 1 -2 tablespoon olive oil
- 1 tablespoon cumin powder
- 1 pinch salt
- 1 pinch pepper
Directions

1In a non-stick skillet over medium heat, add oil and potatoes. Cook until the pototoes are almost done - not quite fork tender. Actual cooking time will depend on the size of your cubes.

2Add the onions, garlic and cumin and continue cooking until potatoes are fully cooked and the onions are soft with a bit of color.

3Add olives and continue cooking until they are warm. Season to taste with salt and pepper.
