Ingredients
- 1 12 cups caster sugar (Confectioners sugar)
- 12 cup water
- 12 cup hot tap water
- 1 tablespoon gelatin
- 2 cups of toasted coconut or 2 cups of coloured coconut
Directions

1Mix the sugar and cold water until the sugar has dissolved.

2Transfer to a large mixing bowl.

3Pour hot water over the gelatine and stir until the gelatine has fully dissolved.

4Pour this mixture over the sugar mixture.

5Beat at a very high speed with electric beaters.

6Beat the mixture until thick and white- this should take 10 to 15 minutes.

7Divide the mixture in half.

8Colour one half yellow and the other half green.

9Pour each mixture into a small square baking tin or dish that have been lightly oiled and lined with plastic cling wrap.

10Refrigerate until set.

11Cut into squares and roll in the coloured coconuts to match the marshmallows.
