Austin Spanish Rice

Ingredients

  • 1 c. uncooked rice
  • 3 Tbsp. oleo
  • 1/2 green bell pepper, chopped
  • 1 small onion, chopped
  • 1 1/2 to 2 tsp. salt
  • 2 Tbsp. chili powder
  • dash of black pepper
  • 1 can tomatoes and chilies or 1 can whole tomatoes
  • 1 lb. lean ground beef
  • 1 tsp. cumin
  • 1 1/2 c. water

Directions

    Saute rice in oleo until light brown. Saute meat, onion and pepper until meat is done. Add salt, pepper, cumin, tomatoes and chili powder.

    Mix together and add water.

    Cook for 5 minutes and then mix in rice mixture.

    Place in a covered casserole dish. Bake, covered, 1 to 1 1/4 hours in a 350° oven.

    Serve with a green salad and hot garlic French bread.
