Ingredients
- 1 c. uncooked rice
- 3 Tbsp. oleo
- 1/2 green bell pepper, chopped
- 1 small onion, chopped
- 1 1/2 to 2 tsp. salt
- 2 Tbsp. chili powder
- dash of black pepper
- 1 can tomatoes and chilies or 1 can whole tomatoes
- 1 lb. lean ground beef
- 1 tsp. cumin
- 1 1/2 c. water
Directions

1Saute rice in oleo until light brown. Saute meat, onion and pepper until meat is done. Add salt, pepper, cumin, tomatoes and chili powder.

2Mix together and add water.

3Cook for 5 minutes and then mix in rice mixture.

4Place in a covered casserole dish. Bake, covered, 1 to 1 1/4 hours in a 350° oven.

5Serve with a green salad and hot garlic French bread.
