Austrian Bread Recipe

Ingredients

• 2 1/2 tsp Active dry yeast
• 1 1/3 c. Bread flour
• 2/3 c. Rye flour
• 1/3 c. Wheat germ
• 2 Tbsp. Gluten flour, 100%
• 1 tsp Salt
• 1/4 tsp Grnd allspice
• 1/4 tsp Rosemary
• 1/2 Tbsp. Oil
• 3 Tbsp. Fruit concentrate, or possibly honey
• 1 c. Water, + 1 t if at high altitude
