Austrian Chocolate Mousse

Ingredients

  • 1 c. chocolate bits
  • 1 oz. unsweetened chocolate
  • boiling water
  • 3/4 c. packed confectioners sugar
  • 2 tsp. vanilla
  • 4 eggs, separated
  • 4 Tbsp. sweet butter, softened

Directions

    Place chocolate bits and unsweetened chocolate, broken into pieces, in a bowl.

    Pour boiling water over chocolate to cover. Cover bowl tightly and let stand 5 minutes.

    Uncover, and carefully pour off as much water as possible.

    Add confectioners sugar, vanilla, egg yolks and butter.

    Beat until smooth.

    Beat egg whites until stiff but not dry.

    Fold into mixture and pour into a pretty glass or china serving dish.

    Chill for several hours or until set. Serves 6.
