Authentic Corn Soup

Ingredients

  • 200 grams Whole kernel canned corn
  • 1/2 Onion
  • 1 small Potatoes
  • 100 ml Heavy cream (or milk)
  • 400 ml Water
  • 1 dash Olive oil
  • 10 grams Butter
  • 1 dash Salt

Directions

    Cut the onion and potato into thin slices.

    Stir fry on low heat with olive oil until the onion becomes translucent.

    Add the corn and continue cooking.

    Add the heavy cream and bring to a boil.

    When it reaches a boil, add the water, a little at a time.

    Once it comes to a boil again,reduce to low heat and simmer for 10 minutes.

    Use a hand blender to make it creamy.

    If using a regular blender, allow to cool down slightly, then blend and return to the pot.

    If possible, put it through a strainer for an even smoother texture.

    Add the butter and let it melt.

    Sprinkle with a small amount of salt.
