Authentic Homemade Pasta

  • 100 grams Cake flour
  • 100 grams Bread (strong) flour
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 2 Eggs
  • 1 Flour for dusting

Directions

    First, combine the cake flour, bread flour, salt, and olive oil in a large bowl.

    Crack the eggs, and beat thoroughly (we will proceed to add in the egg over three turns).

    Add in 1/3 of the eggs, and stir until the dough is crumbly.

    After the dough has become crumbly, add in more egg and continue to mix.

    Next, add in the remaining egg, and knead (until smooth).

    Once the dough becomes glossy, wrap it up in plastic wrap and let sit in the fridge for 1-2 hours.

    Take the dough out of the fridge, divide into 2-4 equal portions, dust with flour, roll out to your desired thickness, and cut into your desired length (you can also use a pasta machine).

    This tastes great boiled for a maximum of 10 minutes.
