Ingredients

  • 4 chicken thighs, with skin
  • chicken seasoning, to taste (I use McCormicks)
  • 4 hot Italian sausage links
  • 1 large onion, cut into large chunks
  • 1 large bell pepper, cut into large chunks
  • 4 medium potatoes, peel and cut into large chunks
  • 2 large carrots, peel and cut into large chunks (optional)
  • 1 (14 1/2 ounce) can diced tomatoes
  • olive oil
  • sage, to taste
  • oregano, to taste

Directions

    Sprinkle chicken thighs with chicken seasoning.

    In large skillet brown Italian sausage with a little olive oil.
  3. 3
    Add chicken and sear skin to brown.

    Drizzle olive oil into a 13 x 9 baking pan.

    Place chicken and sausage in pan.

    Throw onions, peppers, potatoes and tomatoes over and around the chicken and sausage.

    Drizzle with a little more olive oil.

    Sprinkle with desired amount of sage and oregano.

    Cover very tightly with foil.

    Bake @ 425 for 1 1/2 hours.
