- 4 large eggs large
- 2 cups sugar
- 1 teaspoon anise extract
- 4 1/2 cups cake flour
Directions

1Beat eggs until very light and fluffy.

2Gradually add sugar; beat for 15 minutes.

3DO NOT underbeat.

4Fold in anise extract and flour.

5Roll dough 38 inch thick.

6Thoroughly flour springerle mold or rolling pin.

7Press molds firmly to dough.

8Cut cookies apart and place on greased and floured cookie sheet.

9Let dry overnight at room temperture, covered with paper towels, or uncovered.

10Preheat oven to 375F (190C).

11Place cookies in oven and immediately reduce temperature to 300F (150C).

12Bake for 15 minutes.

13Cookies should not brown.

14Store cookies 2 to 3 weeks to mellow flavor.

15These cookies are very hard and may be used for dunking in coffee, tee or cocoa.
