  • 1/4 c. shortening
  • 2/3 c. sugar
  • 2 eggs, beaten
  • 2 c. sifted flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. salt
  • 2 c. raw apples
  • 1 Tbsp. lemon rind, grated
  • 2/3 c. chopped walnuts

Directions

    Cream shortening and sugar until light and fluffy; beat in eggs.

    Sift next 4 ingredients; add alternately with coarsely grated, peeled apples to egg mixture.

    Stir in lemon rind and nuts. Bake in greased and floured 9 x 5 x 3-inch loaf pan at 350° for 50 to 60 minutes.
