Ingredients

  • 3 large potatoes
  • 3 medium onions
  • 1 lb. bacon (more or less to taste)
  • 1 (No. 2) can red kidney beans
  • 1 can tomato paste
  • 1 can tomato soup
  • 1 tsp. sugar
  • salt and pepper to taste

    Generously grease 3 to 4-quart casserole.

    Slightly fry bacon; drain and discard fat.

    Peel and slice potatoes and onions.
  4. 4
    Place in alternate layers in casserole the onions, potatoes and bacon. Mix soup, tomato paste and seasonings and pour over casserole. Cover casserole and bake 1 1/2 to 2 hours, until tender and slightly brown.

    Serves 6 (depending on appetites!).
