Ingredients
- 1 lb. ground beef
- 2 to 3 Tbsp. cooking fat or oil
- 1 c. chopped onions
- 4 c. hot water
- 1 c. cubed raw carrots
- 1 c. cubed raw potatoes
- 2 tsp. salt
- 1/2 tsp. pepper
- 1/2 Tbsp. meat extract
- 1 bay leaf
- 1/4 tsp. dried leaf basil
- 6 whole or canned tomatoes
Directions

1In soup kettle over medium heat, brown beef slowly.

2Add onions and cook 5 minutes.

3Loosen meat from bottom of pan.

4Add water, carrots, potatoes, salt, pepper, meat extract, bay leaf and basil.

5Bring to boil.

6Reduce heat and simmer 20 minutes.

7Add tomatoes and simmer 10 minutes longer.

8Makes 6 servings.
