Avocado Corn Salad

  • 1 whole Lemon
  • 1 teaspoon Cumin
  • 1 can (14 Oz. Size) Niblet Corn
  • 1 whole Diced Red Pepper
  • 1 whole Finely Diced Jalapeno Pepper
  • 1/2 cups Diced Red Onion
  • 1 whole Ripe Avocado, Cut Into Chunks

Directions

    Juice the lemon into a bowl, stir in cumin.

    Drain the niblet corn.
  3. 3
    Add corn, red pepper, jalepeno peper and onion to the bowl with the lemon and cumin. Mix.

    Fold in avocado, carefully so as not to mush it with the other ingredients.

    Let sit for minimum one hour before serving.
