  • 12 ounces corn
  • 4 scallions, chopped
  • 13 cup green pepper, chopped
  • 14 teaspoon salt
  • 18 teaspoon black pepper
  • 1 12 tablespoons mayonnaise, such as Helman's
  • 1 Hass avocado, cubed
  • 2 plum tomatoes, diced

Directions

    Combine all ingredients except the avocado and tomato.

    Chill corn mixture for at least an hour or until serving time.

    Just before serving toss in avocado and tomato.
