  • 2 large eggs
  • 1/2 cup flour
  • 2 tbsp cornmeal
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 cup buttermilk
  • 1/2 ripe avocado
  • 2 tbsp butter
  • 2 tbsp sauce from canned chipotle peppers in adobo sauce
  • 1/4 bunch coriander
  • Tomato Corn Mango Salsa
  • 2 plum tomatoes, finely diced
  • 1 red pepper, finely diced
  • 1 cup fresh corn, shucked, grilled, and cut off the cob
  • 2 green onions, thinly sliced
  • 1 ripe mango, finely diced
  • 1/4 bunch fresh coriander, chopped
  • 1/4 cup olive oil
  • juice of one lime
  • hot sauce, salt, and freshly ground pepper to taste
