Avocado Cream Pasta with Umeboshi Pickled Plums

  • 200 grams Long pasta (e.g. spaghetti)
  • 1 Avocado
  • 2 Umeboshi
  • 6 tbsp * Heavy cream
  • 2 tbsp * White wine
  • 2 tbsp * Olive oil
  • 1 Salt and pepper
  • 1 Black pepper

Directions

    Start to boil the pasta in hot water with salt.

    Peel the skin of the avocado, remove the seed and dice.

    Mince the umeboshi after taking out the seed until it looks like the photo.

    Put the avocado, umeboshi and the * ingredients in another pot and heat.

    Add salt and pepper and check the taste as it cooks.

    Drain the pasta and add it to the pan with 2 and mix it well with the sauce.

    Dish it up on a plate, sprinkle black pepper then it is done.
