Ingredients

  • 1 t. tomato juice
  • 1/2 c. canned tomato puree
  • 3 medium avocados, peeled and chopped
  • 1 medium cucumber, peeled and chopped
  • 1 large green pepper, seeded and chopped
  • 2 large tomatoes, chopped
  • 4 to 5 green onions, chopped
  • 2 Tbsp. minced fresh parsley
  • 1 clove garlic, minced
  • 2 Tbsp. fresh lemon or lime juice
  • 1/2 tsp. hot pepper sauce
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper
  • 1 c. croutons (for garnish)

    In a large bowl, combine all ingredients, except croutons. Chill thoroughly for 2 to 3 hours.

    Serve in chilled bowls. Garnish with croutons.
