  • 4-1/2 cups grapeseed oil

  • 1 cup cilantro, chopped, divided
  • 3/4 cup white balsamic vinegar
  • 3/4 cup lemon zest, grated Safeway 4 ct For $5.00 thru 02/09
  • 3/4 cup red onions, chopped
  • 1/3 cup GREY POUPON Classic Dijon Mustard
  • 2 Tbsp. gingerroot, peeled, grated
  • 2 Tbsp. lime zest, grated Safeway 3 ct For $1.00 thru 02/09
  • 2 Tbsp. fresh parsley, chopped
  • to taste salt and pepper

Directions

    Place all ingredients except 1/4 cup of the cilantro (or 2 tsp.

    of the cilantro for trial recipe), the lime zest, parsley, salt and pepper in blender; cover.

    Blend well, stopping to scrape side of blender as needed.

    Pour into storage container.

    Stir in remaining cilantro, the lime zest and parsley; season with salt and pepper.

    Cover.

    Refrigerate at least 3 hours.

    Adjust seasoning if necessary.

    Serve over torn mixed salad greens.
