  • 2 c. sugar
  • 3/4 c. shortening, creamed
  • 3 eggs
  • 2 c. flour
  • 3 tsp. cinnamon
  • 3/4 tsp. salt
  • 3/4 tsp. allspice
  • 1 1/2 tsp. soda
  • 1 1/2 c. pureed avocado
  • 3/4 c. buttermilk
  • 2 tsp. vanilla extract
  • 1/2 c. chopped walnuts
  • 3/4 c. raisins

Directions

    Combine sugar and shortening, beating until light and fluffy. Add eggs, one at a time, beating well after each addition.

    Sift dry ingredients together.

    Fold into sugar mixture.

    Add pureed avocado and buttermilk.

    Stir in vanilla, walnuts and raisins. Let batter stand for 10 minutes.

    Grease glass loaf pan with additional shortening.

    Line greased pan with waxed paper.

    Fill half full with batter.

    Microwave on High for 8 minutes, turning quarter turn every 2 minutes.

    Cool for a few minutes; remove to rack to complete cooling.
