- 1 large avocado, peeled and pitted
- 1 fresh hot chili pepper, seeded
- 1 Tbsp. parsley leaves
- 2 garlic cloves, crushed
- 1/3 c. vegetable or olive oil
- salt
- 3 scallions (include some of the green), trimmed and coarsely chopped
- 1 large lime (juice only)
- pepper, freshly ground
Directions

1Combine avocado, chili pepper, parsley, garlic and scallions in a food processor.

2Process to a puree.

3Gradually add the oil and beat well.

4Add the lime juice.

5Season with salt and pepper to taste.

6Serve sauce with either fish or on cocktail toast. Makes abut 1 1/2 cups.
