Avocado Omelet

  • 1 1/2 c. sour cream
  • 1/4 tsp. pepper
  • 1 tsp. salt
  • 2 large tomatoes, peeled and chopped
  • 1 avocado, diced
  • 8 eggs, slightly beaten
  • 1/3 c. milk
  • 1/2 tsp. salt
  • 2 Tbsp. butter

    Heat sour cream, salt and pepper in double boiler.

    Add tomatoes and avocado.

    Heat for another 5 minutes.

    Meanwhile, blend the beaten eggs with milk and salt.

    Pour into heated butter in skillet and cook gently, lifting edges occasionally to let uncooked part run underneath.

    When set, pour half of sauce mixture over omelet and fold over.

    Place on hot platter and pour on the rest of the sauce.

    Makes 4 to 6 servings.
