- 1 1/2 c. sour cream
- 1/4 tsp. pepper
- 1 tsp. salt
- 2 large tomatoes, peeled and chopped
- 1 avocado, diced
- 8 eggs, slightly beaten
- 1/3 c. milk
- 1/2 tsp. salt
- 2 Tbsp. butter
Directions

1Heat sour cream, salt and pepper in double boiler.

2Add tomatoes and avocado.

3Heat for another 5 minutes.

4Meanwhile, blend the beaten eggs with milk and salt.

5Pour into heated butter in skillet and cook gently, lifting edges occasionally to let uncooked part run underneath.

6When set, pour half of sauce mixture over omelet and fold over.

7Place on hot platter and pour on the rest of the sauce.

8Makes 4 to 6 servings.
