Avocado omelet

  • 1/4 medium avocado
  • 1 large egg
  • 1 oz low fat cheese
  • 1 tsp salt and pepper
  • 1/2 tsp minced onion flakes

Directions

    Warm small pan with a half of a tsp of butter

    Add whisked egg to pan

    Let egg cook, lifting sides occasionally to let raw egg run off.

    Put cheese on omelet then add sliced avocado on top.

    Season to taste

    Fold omelet in half and add any leftover cheese and avocado to top.

    Season again to taste.
