- 1 Tablespoon Oil
- 1 whole Onion, Diced
- 3 cloves Garlic, Minced
- 6- 3/4 ounces, weight Arborio Rice
- 1 whole Vegetable Stock Cube
- 4 cups, 3 tablespoons, 1-78 teaspoons, 1/4 pinches Hot Water
- 2 whole Avocados, Peeled And Pitted
- 1 Tablespoon Lime Juice
- 3-58 ounces, weight Edam Cheese, Grated Or Diced (or Another Mild Cheese)
- 2 Tablespoons Fresh Parsley, Chopped
- Salt And Pepper, to taste

1Heat the oil in a large frying pan, wok or risotto pan, and cook the onion and garlic over a medium-low heat for 5 minutes, until soft and translucent.

2Add the rice and cook for a further 2 minutes.

3In a bowl, mix the stock cube with about 150ml hot water and stir to dissolve.

4Then add this into the pan.

5Cook, stirring, until the liquid has nearly all been absorbed.

6Add more hot water around 150ml at a time, again waiting for it to be mostly absorbed before adding more, and stirring regularly.

7Continue adding water until the rice is cooked to your liking.

8I ended up using just over a litre of water, but you might need slightly more or less.

9Meanwhile, put the avocado into a bowl.

10Coarsely mash the avocado with a fork, along with the lime juice and salt and pepper.

11When the rice is cooked, add the cheese, then the mashed avocado and chopped parsley, and mix until combined.

12Serve warm.
