Avocado With Gazpacho

Ingredients

  • 1 1/2 Tbsp. chopped onion
  • 3 chopped cucumbers
  • 1 tsp. minced pickled jalapeno pepper
  • 1 avocado, peeled, halved and pitted
  • lemon juice
  • lettuce
  • 1/4 c. chopped tomato
  • 3 Tbsp. chopped green bell pepper
  • 2 tsp. lemon juice
  • tortilla chips

Directions

    Combine onion, tomato, cucumbers, bell pepper, jalapeno pepper and lemon juice.

    Brush avocado with lemon juice to keep from turning brown.

    Put avocado on lettuce and put in onion mixture. Serve with chips.

    Do the same with remaining ingredients and pour sauce over same.
