- 1 1/2 pound hash brown potatoes frozen
- 1 pound bacon or sausage
- 3 large eggs
- 1 each onions chopped
- 2 ounces cheddar cheese shredded
- 10 1/2 ounces soup, cream of potato
- 1 x salt and black pepper to taste
Directions

1Cook the hash browns with the onion until crisp.

2Add the bacon or sausage and cook until just beginning to brown, drain off any excess fat (if any).

3Remove from heat, add the soup, cheese, beaten eggs and black pepper to taste.

4(No need to add salt as the soup, bacon or sausage will have more than enough seasoning)

5Transfer the mixture to a 13 by 9 inch baking dish, top with a bit of cheese if desired.

6Bake for 30 to 50 minutes in a 350F (180C) F oven.

7Allow to rest about 5 minutes before serving.
