  • 4 ripe avocados (optional)
  • 1 1/2 c. Shoe Peg corn (12 oz. can), drained
  • 1 c. kidney beans, drained
  • 1/2 c. onion, chopped
  • 1/3 c. green pepper or green chilies, chopped
  • 2 Tbsp. pimento, chopped
  • 1/4 c. (or more) Catalina French dressing

Directions

    Mix all ingredients except avocados.

    Chill and serve in an avocado half on a bed of lettuce.
