- 1 eggplant, halved lengthwise
- salt and freshly ground pepper to taste
- olive oil (for brushing)
- 1 clove garlic, coarsely chopped
- 1/4 c. tahini
- 1/4 tsp. ground cumin
- 1 Tbsp. parsley sprigs
- juice of 1/2 lemon
Directions

1Make tiny cuts in the flesh side of the eggplant.

2Sprinkle it with salt and set on a plate for 30 minutes.

3Rinse the eggplant with water and pat it dry.

4Heat the broiler.

5Brush the cut sides with oil and broil the eggplant as close to the element as possible for 5 minutes or until golden brown.

6Move the eggplant to about 6 inches from the element and continue broiling for 20 minutes or until very tender when tested with a fork.

7Leave to cool.
