  • 2 cups Sweet Rice
  • 2 cups Coconut Milk
  • 2 cups Water
  • 2 whole Eggs
  • 1 cup Lowfat Milk
  • 1/2 teaspoons Vanilla
  • 1 stick Melted Butter (8 Tbsp)
  • 1-1/2 cup Brown Sugar
  • 1 teaspoon Baking Powder

Directions

    Cook rice in coconut milk and water. In a large bowl, beat eggs. Then stir in the milk, vanilla, and butter. Mix well. Add brown sugar and baking powder. Mix in the cooked sweet rice.

    Lightly grease a 13 x 9in pan with butter. Pour rice mixture into the pan and spread evenly. Bake at 350 degrees for 1 hour. Once done, let cool for 10 minutes and then cut into squares while still warm.

    Serve warm or at room temperature.
