Bacon And Cheese Corn Bread

- 1/2 c. yellow corn bread mix
- 1 1/2 c. milk
- 2 eggs, beaten
- 1/4 c. butter, softened
- 1/4 tsp. salt
- 3 tsp. baking powder
- 1/4 tsp. crushed red chilies (optional)
- 1 c. shredded sharp cheese
- 5 slices bacon, cooked
Directions

1Heat cornmeal and milk over medium heat until thick and dry, stirring frequently for about 3 minutes.

2Spoon cornmeal mixture into a bowl.

3Add the remaining milk, butter and eggs and beat until smooth.

4Stir in salt and baking powder (eliminate if you use a yellow corn bread mix).

5Add red chilies, if used.

6Stir in cheese and bacon and pour into a casserole dish or cake pan.

7Bake at 325° for about 35 minutes or until brown.
