Bacon And Egg Fried Rice

Ingredients

  • 1 tbsp olive oil
  • 2 tbsp mixed fresh herbs, chiffonade
  • 4 slices bacon
  • 4 None eggs, beaten
  • 7 oz long-grain rice, cooked, chilled
  • 1 None large zucchini, finely chopped
  • 5.25 oz red cabbage, thinly sliced
  • 2/3 cup lime and chili sauce

    Combine olive oil and herbs. Set aside.

    Cook bacon in a nonstick wok over high heat, stirring, for 2-3 mins. Set aside. Add eggs and cook, stirring, for 1 min, until set. Add rice, zucchini, cabbage and herbed oil. Cook, tossing, for 3-5 mins. Add lime and chili sauce and season. Serve with bacon.
