Bacon And Onion Cornbread

Ingredients
- 1/3 c. chopped onion
- 1 Tbsp. butter or margarine
- 1 c. yellow cornmeal
- 1/2 lb. bacon, cooked crispy and well drained
- 1 tsp. salt
- 1 tsp. baking soda
- dash of pepper
- 2 eggs, well beaten
- 2 c. milk or buttermilk
Directions

1Saute onion in butter until tender, about 5 minutes; set aside. Cook bacon until crispy; drain well.

2In a large bowl, combine cornbread, bacon in bits, salt, baking soda and pepper.

3Add milk to beaten eggs.

4Mix well.

5Gradually add buttermilk mixture and onions to cornbread mixture stirring constantly.

6Pour into a greased 3/4 x 7 x 1 1/2-inch oblong pan.

7Bake in 425° oven for 20 minutes.

8Cut and serve.
