Ingredients

  • 1 to 2 lb. bacon, cut in half while still blocked
  • 1 to 2 (14 oz.) bottles ketchup
  • 1/2 to 1 (5 oz.) bottle Worcestershire sauce
  • 1 to 2 (8 oz.) cans water chestnuts
  • 1/2 to 1 c. brown sugar
  • 1/2 to 1 tsp. bitters (not necessary but adds zest)

Directions

    Wrap chestnuts in bacon half-strips and pin with toothpicks. Place standing in oven pan.

    Cook at high temperature (425°) until bacon is well rendered but not crisp or burned at top edges (about 15 to 20 minutes).

    Drain excess grease from pan.

    Mix remaining ingredients for sauce.

    Baste each piece well and return to oven. Use ample amount of sauce for good basting.

    Cook 5 to 10 minutes and repeat basting. Cook 3 to 5 more minutes.
