Bacon Cheese Potatoes

Ingredients
- 8 to 10 medium potatoes (2 1/2 to 3 lb.)
- 1/2 c. finely chopped onion
- 1 lb. processed American cheese, cubed
- 1 c. mayonnaise
- 1/2 lb. bacon, cooked and crumbled
- 3/4 c. sliced black olives
- chopped fresh parsley (optional)
- paprika (optional)
Directions

1Peel potatoes; place in a saucepan and cover with water.

2Cook until tender, but firm; drain and cube.

3In a bowl, mix potatoes, onion, cheese and mayonnaise.

4Transfer to an ungreased 13 x 9 x 2-inch baking dish.

5Sprinkle with bacon and olives.

6Cover and bake at 350° for 30 minutes or until heated through.

7If desired, sprinkle with parsley and paprika.
