- 6 slices bacon
- 1 1/4 c. flour *
- 1 c. cornmeal
- 2 Tbsp. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1 1/2 c. milk
- 1/3 c. vegetable oil or shortening, melted
- 1 egg, beaten
Directions

1Heat oven to 425°.

2Cook bacon until crisp; drain and crumble. Spoon 2 tablespoons bacon fat into round pan, 9 x 1 1/2-inches. Sprinkle with bacon.

3Mix flour, cornmeal, sugar, baking powder and salt.

4Mix in remaining ingredients thoroughly.

5Carefully pour batter over bacon.

6Bake 25 to 30 minutes or until golden brown and cracks feel dry.

7Immediately invert onto heatproof serving plate.

8Makes 8 to 10 servings.
