  • 1 1/4 cups whole milk
  • 1 large egg
  • 3/4 stick (6 tablespoons) unsalted butter, melted and cooled
  • 1 cup yellow cornmeal
  • 3/4 cup all-purpose flour
  • 1 cup chopped scallions
  • 8 bacon slices, cooked and crumbled (1/2 pound)
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt

    Whisk together milk, egg, and butter in a small bowl.

    Whisk together remaining ingredients in a large bowl, then add milk mixture to dry ingredients.
