Bacon Flavored Squash

- 4 slices bacon
- 4 large yellow squash, sliced
- 2 green onions, sliced
- 1 egg, beaten
- 1/2 c. sour cream
- 1/2 c. Swiss cheese, shredded
- 3/4 c. Cheddar cheese, shredded
Directions

1Cook bacon, drain, crumble and reserve drippings.

2Saute squash and onion in bacon drippings for 8 to 10 minutes.

3Combine egg and sour cream, and add to squash and onions.

4Stir in half of bacon. Spoon half of squash mixture into shallow greased 2 qt. casserole. Sprinkle Swiss cheese on top.

5Add other half of squash mixture. Sprinkle Cheddar on top.

6Sprinkle remaining bacon on top.

7Bake at 350° for 20 minutes or until bubbly.
