- 1/2 lb. bacon, cut in 1-inch pieces
- 3 eggs
- 4 Tbsp. oil
- 2 Tbsp. soy sauce
- 4 c. cold cooked rice (1 c. raw)
- 1/2 tsp. salt
- 1/4 c. chopped green onions
Directions

1Fry bacon until crisp.

2Drain fat from pan.

3Set bacon aside. Beat eggs lightly and scramble in frypan, breaking up large pieces. Remove from pan.

4Heat oil in wok or large frypan and add cooked rice.

5Stir-fry a few minutes, then add soy sauce, salt, eggs, green onions and bacon.

6Heat through.

7Freezes well.

8Serves 4.
