  • 6 slices bacon, fried crisp and drained
  • 1 12 cups flour
  • 2 teaspoons baking powder
  • 12 teaspoon salt
  • 2 teaspoons sugar
  • 1 cup shredded swiss cheese
  • 14 cup finely chopped chives (green onions are okay too)
  • 1 egg
  • 34 cup milk or 34 cup half-and-half
  • 1 tablespoon Dijon mustard
  • 14 cup canola oil or 14 cup vegetable oil

Directions

    Preheat oven to 400 degrees F.

    Spray regular size muffin containers with cooking spray.

    In a bowl, sift together, flour, baking powder and salt.

    Stir in sugar, cheese and chives.

    Crumble the bacon, and add to dry ingredients;

    In a bowl combine the egg with milk, mustard and Dijon;stir just until blended, then mix into the dry ingredients just until combined.

    Spoon mixture into prepared muffin cups.

    Bake for 15-20 minutes, or until golden brown.

    Remove from oven; cool 2 minutes.

    Remove from pans and serve warm.
