Ingredients
- 6 slices bacon, fried crisp and drained
- 1 12 cups flour
- 2 teaspoons baking powder
- 12 teaspoon salt
- 2 teaspoons sugar
- 1 cup shredded swiss cheese
- 14 cup finely chopped chives (green onions are okay too)
- 1 egg
- 34 cup milk or 34 cup half-and-half
- 1 tablespoon Dijon mustard
- 14 cup canola oil or 14 cup vegetable oil
Directions

1Preheat oven to 400 degrees F.

2Spray regular size muffin containers with cooking spray.

3In a bowl, sift together, flour, baking powder and salt.

4Stir in sugar, cheese and chives.

5Crumble the bacon, and add to dry ingredients;

6In a bowl combine the egg with milk, mustard and Dijon;stir just until blended, then mix into the dry ingredients just until combined.

7Spoon mixture into prepared muffin cups.

8Bake for 15-20 minutes, or until golden brown.

9Remove from oven; cool 2 minutes.

10Remove from pans and serve warm.
