Bacon 'N' Egg Casserole

- 2 slices white bread, toasted and cut into cubes
- 4 oz. Swiss or Cheddar cheese, shredded
- 4 oz. sliced Canadian style bacon, cut into 1/2 inch squares divided
- 2 c. skim milk
- 4 eggs
- 1/2 tsp. each salt and prepared mustard
- 1/8 tsp. each onion powder and pepper
Directions

1Preheat oven to 350°.

2Spray an 8 x 8 x 2-inch baking pan with nonstick cooking spray.

3Arrange bread cubes over bottom of pan. Sprinkle with cheese and top with 2 ounces bacon.

4In medium mixing bowl beat together milk, eggs and seasonings; pour egg mixture into pan and sprinkle with remaining 2 ounces bacon.

5Bake for 45 to 50 minutes (until top is browned and knife inserted in center, comes out clean).
