Bacon 'N' Egg Casserole

  • 2 slices white bread, toasted and cut into cubes
  • 4 oz. Swiss or Cheddar cheese, shredded
  • 4 oz. sliced Canadian style bacon, cut into 1/2 inch squares divided
  • 2 c. skim milk
  • 4 eggs
  • 1/2 tsp. each salt and prepared mustard
  • 1/8 tsp. each onion powder and pepper

    Preheat oven to 350°.

    Spray an 8 x 8 x 2-inch baking pan with nonstick cooking spray.

    Arrange bread cubes over bottom of pan. Sprinkle with cheese and top with 2 ounces bacon.

    In medium mixing bowl beat together milk, eggs and seasonings; pour egg mixture into pan and sprinkle with remaining 2 ounces bacon.

    Bake for 45 to 50 minutes (until top is browned and knife inserted in center, comes out clean).
