Bacon-Spinach Quiche

  • pastry for 1 crust 10-inch pie
  • 1 (8 oz.) cream cheese
  • 1 c. milk
  • 4 eggs, beaten
  • 1/4 c. chopped onion
  • dash of pepper
  • salt (if desired)
  • 1 Tbsp. margarine
  • 10 oz. pkg. frozen chopped spinach, cooked and drained
  • 1 c. (4 oz.) shredded Swiss
  • 6 crisp bacon strips, crumbled

Directions

    Prick bottom and sides of pastry with fork.

    Bake at 400° for 12 to 15 minutes until lightly brown.

    Combine cream cheese and milk in saucepan, stir over low heat until smooth.

    Gradually add this to eggs; mix well.

    Saute onions in margarine.

    Add onions and remaining ingredients to cheese mixture.

    Pour in shell.

    Bake at 350° for 40 to 45 minutes.
