- 2 packets dry yeast
- 4 1/4 to 4 1/2 c. flour
- 1 1/2 c. warm water
- 3 Tbsp. sugar
- 1 Tbsp. salt
Directions

1In a large bowl combine yeast and 1 3/4 cups flour, water, sugar and salt.

2Beat at low speed 30 seconds, scraping sides of bowl often.

3Beat at high speed 3 minutes.

4Stir in enough of rest of flour for stiff dough.

5Knead 5 to 8 minutes.

6Cover and let rest 15 minutes.

7Cut into 12 portions, shape and let rest 20 minutes.

8Meanwhile, add 1 tablespoon sugar to 1 gallon water and bring to boil.

9Cook bagels 7 minutes in simmering water, turning once.

10Bake at 375° on ungreased pan for 30 to 35 minutes.

11Do not use cast-iron pans or sheets, the bagels will stick.
