Ingredients
- 1 c. diced conch
- 2 c. diced potatoes
- 1/2 c. celery, diced
- 1/2 c. carrots, diced
- 1/2 c. green pepper, diced
- 1 (No. 2) can whole tomatoes, chopped (or fresh)
- 2 oz. bacon, diced
- 1/2 c. ham, diced (optional)
- 1/2 c. onion, diced
- 1/4 tsp. thyme
- salt and pepper to taste
Directions

1Wash, drain and dice conch.

2Cook bacon.

3Saute onion in bacon fat.

4Pour all ingredients in Dutch oven to cook with 2 quarts of water for 3 1/2 hours or until done.

5Season with hot sauce or Worcestershire sauce.
