Bake Stuffed Haddock

  • 1 lb. fresh haddock
  • 6 to 8 large cooked shrimp
  • 1 stack Ritz crackers, crushed
  • 3/4 c. margarine
  • 1/2 tsp. garlic powder
  • 2 dashes ground pepper
  • paprika
  • 2 Tbsp. lemon juice

Directions

    Melt margarine in medium size microwave bowl.

    Add stack of crushed crackers.

    Add garlic powder, lemon juice and pepper.

    Mix well.

    Place fish in baking dish with shrimp on top.

    Put crumb mixture over all.

    Sprinkle with paprika.

    Cover with foil and bake at 400° for 25 minutes.

    Remove foil and broil 5 minutes to brown top.

    Squeeze a bit of lemon juice over top and serve.
