- 3 whole Ripe Avocados, Peeled, Pit Removed And Cut Into 1/2 Inch Wedges
- 13 cups Flour
- 1 teaspoon Chipotle Powder
- 2 whole Eggs, Beaten
- 1 cup Panko Bread Crumbs
- 1 dash Olive Oil Spray
Directions

1Preheat the oven to 450 F.

2Make three bowls.

3One with flour and chipotle powder, one with beaten eggs, and one with panko breadcrumbs.

4Dip the avocado slices in flour until covered and shake off excess.

5Dip in the eggs and then dip in the panko to coat.

6Yep, your hands will be a mess!

7Place the avocados in a single layer on a baking sheet and spray generously with a cooking spray.

8Bake for 10-15 minutes until crispy and light brown.

9Serve warm with your preferred dipping sauce.
