- 2 lb. yellow eye or soldier beans
- 1/2 lb. salt pork
- 1/2 tsp. dry mustard
- 1 medium onion
- 1/2 c. molasses
- clove of garlic
- 2 c. sugar
Directions

1In cold water, soak beans overnight in a Dutch oven size pan. The next morning, set on stove (just as they are) and parboil for about 1 hour.

2Add salt pork (cut up into several pieces), dry mustard, onion (cut up into about 4 pieces), molasses, sugar and clove of garlic (cut up).

3Cover all with water.

4Bake at 350° until beans are tender and not mushy, approximately 4 to 5 hours. Keep checking and add water to keep beans covered.

5Stir each time you check.
