Ingredients

  • 1 None medium onion, peeled and chopped
  • 2 strips bacon, coarsely chopped
  • 1/4 cup olive oil
  • 2 slices sourdough bread, torn into pieces
  • 2 oz Parmesan, finely grated
  • 2/3 cup oregano, coarsely chopped
  • 2 cloves garlic, peeled and crushed
  • 3 x 14 oz cans white beans, rinsed and drained
  • 2 cups tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1/4 cup maple syrup
  • 2 tsp smoked paprika

    Preheat oven to 425°F.

    Combine onion, bacon and 1 tbsp of the oil in 2 quart baking dish. Bake, uncovered, about 15 mins or until onion is browned lightly.

    Meanwhile, combine bread, cheese, oregano and remaining oil in a medium bowl.

    Stir beans, tomato sauce, Worcestershire sauce, maple syrup, garlic and paprika into bacon mixture and season to taste. Top with bread mixture. Bake, uncovered, about 10 mins or until bread is browned.
