Ingredients

  • 1 tbsp vegetable or olive oil
  • 1 None small onion, finely chopped
  • 1 clove garlic, minced
  • 2 slices bacon, chopped
  • 2 tbsp tomato paste
  • 13.5 oz can diced tomato
  • 1 tbsp brown sugar
  • 13.5 oz can mixed beans, rinsed
  • 4 thick slices whole grain bread, toasted, to serve
  • 1 None large avocado, sliced, to serve

Directions

    Heat oil over medium heat, add onion and garlic and cook for 5 mins, or until soft. Add bacon and cook for 2 mins, or until lightly browned and cooked. Add tomato paste, diced tomato, sugar and beans. Bring to a boil then reduce heat and simmer, stirring occasionally, for 8 mins, or until sauce thickens. Serve warm with toast and avocado.
