Ingredients

  • 1 lb. navy beans
  • 1/4 lb. salt pork
  • 3 or 4 slices bacon
  • 1 (8 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 2 Tbsp. catsup
  • 3 Tbsp. heaping brown sugar
  • 1 Tbsp. wet mustard
  • 3 Tbsp. molasses
  • 2 Tbsp. honey
  • 1 medium chopped onion

Directions

    Add 6 cups cold water to beans; bring to boil, then simmer 2 minutes.

    Remove from heat, cover tightly and let stand 1 hour. Add salt pork; let boil, then simmer 1 hour.

    Drain; keep juice. Take out salt pork to taste.

    Mix in saucepan, tomato sauce, paste, catsup, brown sugar, mustard, molasses, honey and onion. Mix with beans.

    Place bacon in baking dish, then pour in bean mix.

    Add 3 or 4 tablespoons bean water.

    Cover with foil with 1 air hole.

    Bake at 275° for 5 to 6 hours.

    After 2 1/2 hours, check and add bean water.
